If you are are wondering about the stack of logs that we often used to fall across, the purpose is two fold. First we were falling on a small parcel that had a knoll right in the middle of it. By lifting the but of the log in the air it allows the rest of the tree to cant over the knoll without breaking. The second reason is that by falling over the stack of logs or even a single log, it allows the top of the tree to catch up to the rest of the tree before it slaps the ground and breaks. It takes a little more time but you save a lot more wood when you are falling trees this big. Sometimes Quality over Quantity is the way to go.
